Oil is lighter than water — and than most people guess

A level US tablespoon of olive oil weighs about 13.5 g, noticeably less than the 14.8 g a tablespoon of water weighs. Oil is roughly 8% less dense than water, which is exactly why it floats on top of vinegar in a dressing. If you've been logging olive oil as "15 g per tablespoon", you've been over-counting slightly.

The bigger source of error isn't the density — it's free-pouring. An unmeasured "glug" from the bottle is commonly 2–3 tablespoons, not one. If the amount matters (dressings, baking, tracking), pour into the spoon or straight onto a scale.
