Honey weighs more than you would guess (and sugar swaps)

Because honey is about 80% sugar, it is dense: a cup tips the scale at roughly 340g, nearly half again as heavy as the same cup of water. That is also why a tablespoon is a hefty 21g. To stop it sticking, lightly oil the cup or spoon and it slides straight out.
