Measuring tallow solid versus melted
Beef tallow is solid at room temperature like lard, so you can measure it two ways: pack it firmly into a measuring cup and level the top, or melt it and weigh it — a cup is about 205 g either way. Weighing melted is the most accurate, since solid fat traps air pockets. Tallow's high smoke point makes it excellent for deep-frying, roasting potatoes and searing, and it swaps roughly 1:1 for lard or shortening in most recipes. Store it airtight; it keeps for months and even longer refrigerated.
