Potato starch vs potato flour

Potato starch is the pure, silky white starch extracted from potatoes — not to be confused with potato flour, which is the whole dried potato ground up and tastes distinctly of potato. It packs to about 160 g per cup and works much like cornstarch as a thickener, with the bonus of tolerating higher heat. Stir it into a little cold liquid first to make a slurry, then add it near the end of cooking; long boiling breaks it down and thins the sauce back out.

It's a staple in gluten-free flour blends and gives fried coatings a light, crisp shell.

Can I substitute potato starch for cornstarch?
Yes, roughly 1:1 for thickening. Potato starch handles higher heat but should be added near the end of cooking, since prolonged boiling thins it back out.
What can I use instead of potato starch?
Cornstarch, tapioca starch or arrowroot all work as 1:1 thickeners. For baking blends, tapioca starch is the closest match in texture.
