Potato Starch: Cups to Grams
A US cup of potato starch weighs 160 g. Working back the other way, 100 g is about 5/8 cup and 250 g is about 1 1/2 cups. Use the calculator for any amount in between.
💡 Tip: Potato starch thickens like cornstarch and tolerates higher heat, but don't boil it long or it thins out. Add near the end of cooking.

Potato starch vs potato flour
Potato starch is the pure, silky white starch extracted from potatoes — not to be confused with potato flour, which is the whole dried potato ground up and tastes distinctly of potato. It packs to about 160 g per cup and works much like cornstarch as a thickener, with the bonus of tolerating higher heat. Stir it into a little cold liquid first to make a slurry, then add it near the end of cooking; long boiling breaks it down and thins the sauce back out.
It's a staple in gluten-free flour blends and gives fried coatings a light, crisp shell.
